Easy Campfire Cooking with Cast Iron Cookware
Campfire cooking and your favorite camping recipes is easier and better when you use cast iron cookware like a large cast ion skillet or Dutch oven. You will get the best camping food ever with the least effort - leaving more time for you in those folding camping chairs.
You can use Coleman camping stoves, or other gas cookers, but nothing really beats open campfire cooking. And for that you need good camping cooking equipment.
Creole Sausage and Rice Camping Recipe
This Creole Sausage and Rice Camping Recipe works especially well for open campfire cooking as long as you have the right camping cooking equipment, like cast iron cookware.
Serves 6 - 8 *can be increased for more campers
Cook time: 30 - 40 minutes
Camping cooking equipment needed:
- Lg. cast iron skillet w/lid or Dutch oven
- Spatula
- Lg. serving spoon
- Chopping knife
- Cutting board
- Measuring cup/Spoons
Main Ingredients:
- 11/2 lbs. Kielbasi Sausage
- 1 lb. Spicy breakfast sausage, bulk - not links
- 1 Red Bell Pepper - diced
- 1 lg. Spanish onion - diced
- 4 Ribs of Celery w/tops - cut
- 2 cans (14-16oz), Stewed tomatoes - undrained
- 2 pkgs. Lipton Spanish Rice mix
- 1/2 tsp salt
- 1 tsp Black pepper
- 1 tbsp. crushed red pepper flakes
- 2 tbsp. olive oil
- 4 cups water
Note: For milder flavor, omit crushed red pepper flakes and use mild or medium breakfast sausage.
Creole Sausage and Rice Campfire Cooking Instructions
Creole Sausage and Rice is easy to make with these simple campfire cooking instructions.
- Dice onion and Bell pepper - set aside
- Chop celery w/tops into medium-size chunks (approx. 1/2")
- Slice kielbasi sausage into 1/2" diagonal slices - set aside
- Crumble breakfast sausage into hot skillet or Dutch oven, add 1 tbsp. olive oil and brown over high heat until done. Drain and set aside
- Saute Kielbasi, Bell pepper, onion, and celery, (no tops), in same pan
- Add all remaining ingredients - except breakfast sausage - and spices, and celery tops, and water, stir to mix well and bring to a simmer over medium heat or coals
- Cover and simmer over low heat 10 minutes - uncover, add crumbled breakfast sausage, stir to mix well and simmer 5 more minutes to let excess liquid boil off.
- Remove from heat and let sit 5 minutes before serving
